Summer doesn’t really begin for me until I take my first bite of watermelon. Ok, that’s an exaggeration. Summer begins sometime between my first horrible sunburn of the season and my favorite baseball team adding a handful of their best players to the disabled list. But somewhere in there is the first bite of watermelon, and it’s glorious. Apart from being a delicious summertime snack, watermelon is a truly versatile fruit. It can be enjoyed on its own, or muddled in a cocktail, or, as with this recipe, dressed up as the main ingredient in a salad.
I’ve come to terms with the fact that I’m not a master chef. I’m impatient and a little clumsy and I tend to overcook meat and poultry. Simple ingredient dishes are where I truly shine, mostly because the ingredients do all the work for me. Farmers Markets are my best friend. This salad is quick to prepare and great for a summer BBQ or cookout. Enjoy!
Ingredients:
- 3½ cups watermelon, cubed
- 1½ limes
- 1 cup crumbled feta cheese
- ¼ cup mint chiffonade
- Salt to taste
Instructions:
- Combine watermelon, mint, and feta in a large salad bowl
- Squeeze lime juice over combined ingredients
- Sprinkle salt to taste
